Dijon Chicken Pocket Get It Done Nutrition - Focus T25 Recipe (makes 1 serving)
Ingredients
2 oz. Cooked Chicken Breast, cubed or shredded
2 tbsp. plain nonfat Greek Yogurt
2 tsp. Dijon mustard
1 tsp. chopped raw pecans
1 whole wheat pita, cut in half to make pockets
parsley
Combine Cooked Chicken Breast, yogurt, mustard, and pecans in a small bowl; mix well.
Fill both pita halves evenly with chicken mixture
Garnish with parsley if desired.
I usually cook 2 or 3 chicken breasts and prepare enough for the week. It makes things SO much easier. Just grab and go! Simple, healthy, and delicious lunch/dinner prepped for the week in about 30 minutes.
I cut up the chicken after it is cooked and measure out 2 oz for each day. Then I mix the chicken with the other ingredients and put it into baggies. Each morning, I wrap it all up in a tortilla or stuff it into pita bread. I don't like to prep the wrap/bread ahead of time or else it gets soggy. I loveeee this recipe! It's so simple and very yummy!
Ahhh.... Shakeology to the rescue! I decided to try out a new recipe and it was a success.
Snickers Shakeology Recipe
Ingredients:
1 cup almond milk
3 ice cubes
1 tbsp slivered almonds (plus a few for topping)
1 tsp caramel extract
1 scoop Chocolate Shakeology
Directions:
Blend all ingredients until smooth. Pour into a cup. Top with leftover slivered almonds. Drink and enjoy every sip!

Ingredients:
1/4 cup dry quinoa
1/2 cup water
1 banana
handful of walnuts or pecans
1 tbsp pure maple syrup
Directions:
Combine quinoa and water in a pot. Bring to a boil. Reduce heat, cover, and simmer for 9 minutes or until all of the water is absorbed. Top with 1 sliced banana, pecans/walnuts, and pure maple syrup.

Chocolate/Vegan Chocolate
Nutty Banana 1 scoop Chocolate Shakeology
1 cup almond milk, coconut milk or water
2 tbsp PB2

Chocolate Bananas Foster
1 scoop Chocolate Shakeology
1 cup almond milk, coconut milk or water
1/2 cup frozen bananas
5 big dashes cinnamon
1 splash rum extract
Chocolate Cake Batter
1 scoop Chocolate Shakeology
1 cup almond milk, coconut milk or water
1/4 pkg sugar free Jello Cheesecake pudding mix
ice to taste
Vanilla
Vanilla Chai
1 scoop Vanilla Shakeology
1 cup cool brewed Chai tea
1 teaspoon raw honey
1 dash ground allspice Orange Creamsicle
1 scoop Vanilla Shakeology
1/2 cup water
1/2 cup 100% orange juice
ice to taste
Nutty Butter
1 scoop Vanilla Shakeology
1 cup almond milk, coconut milk, or water
1/2 medium banana
1/4 cup chopped raw walnuts
1 tbsp all-natural peanut butter
Pumpkin Pie
1 scoop Vanilla Shakeology
1 cup almond milk, coconut milk, or water
1/2 cup canned pumpkin puree
1 tbsp chopped raw pecans
1 tsp pure maple syrup
1 tsp pumpkin pie spice
I love making steel cut oatmeal but it takes so long to cook on top of the stove and I never have that much time in the morning. I decided to try it out in the crock pot. It is so nice to throw everything in the crock pot, wake up, get ready, and eat a warm breakfast!
Here is my Apple Pie Steel Cut Oatmeal recipe!
Ingredients:
2 apples - peeled, seeded, and chopped (I used 1 honeycrisp and 1 Gala apple)
1 cup steel cut oats
1 1/2 cups almond milk
1 1/2 cups water
1 tsp cinnamon
1 tbsp ground flax seed
Directions:
Line crock pot with a liner. (^^This step is optional but I like to use the liners so that there isn't a huge mess to clean up afterwards!)
Put all ingredients into the crock pot.
Set crock pot on LOW and cook for approximately 7 hours.
Scoop about 3/4 cup of oatmeal into a bowl.
Add walnuts, honey, maple syrup, brown sugar, or your favorite toppings!
Save leftovers in the fridge and enjoy again tomorrow.

Candy Corn Wine Bottle Craft
Supplies needed:
wine bottles
orange, yellow, and white tissue paper
spray paint
Mod Podge (glossy)
small paintbrush
cardboard (for work surface)
ribbon
Drink wine. Rinse bottles with warm water and soap. Remove labels. Dry.
Put the bottles on top of cardboard in an open area. Cover bottles completely with spray paint. Let dry.
While the
spray paint is drying, cut your tissue paper into squares. The squares
do not have to be perfect and can be different sizes. Make sure that
you have enough squares to cover and overlap on all of the bottles.
"Paint"
the entire bottle with Mod Podge. Stick the pieces of tissue onto the
Mod Podge. You can overlap pieces of tissue. Try to flatten them onto
the bottle as much as possible. Cover the entire bottle with tissue
paper squares.
Once the
bottle is covered with tissue paper, you will paint over top of the
tissue with another layer of Mod Podge. Cover the entire bottle. **Be careful when you are doing this step because the orange tissue paper will stain the yellow and white. You might want to rinse your paintbrush and just do one color at a time.**
Let the bottle dry.
Add ribbon around the neck of the bottle.
Arrange the bottles onto a tray for a cute, Fall decoration!

Ingredients:
4 cups flour
1 cup salt
4 tbsp oil
1 1/2 cups water
2 tbsp cinnamon
2 tbsp pumpkin pie spice
red and yellow food coloring
Mix flour, salt, cinnamon, and pumpkin pie spice in a large bowl.
Mix oil and food coloring together before adding to dry mixture.
I started out with 6 drops of red and 15 drops of yellow food coloring and just added more as needed.
Add oil, food coloring, and water to the bowl and stir.
Add extra cinnamon and pumpkin spice spice until you have reached your desired scent.
Mix until pliable. Keep in a container or a ziplock bag.
-Preheat oven to 375 degrees
-Mix all ingredients except the chocolate chips together, and let sit while you prepare the muffin pans.
-Spray a muffin pan with non-stick spray.
-Stir the chocolate chips into the oatmeal batter.
-Divide batter into muffin pan.
-Bake 20-30 minutes, you’ll see the edges just starting to brown and they will be firm to the touch.
-The muffins may stick when hot but are removed easily when cooled for a bit.
Late at night is the hardest time of day for me. I keep wanting to eat after I
already had a huge, healthy dinner! I think I just get bored and start thinking
about what I can eat. Probably a sign that I should be drinking more
water!
So just in case you're feeling the way I am right now... DON'T DO
IT! KITCHEN IS CLOSED! Don't sabotage your results with late night
snacking.
Here are some ideas that might help: -Drink water -Chew gum -Brush your teeth -Log all of your meals using LoseIt! or MyFitnessPal
Whatever it takes
to get you through those cravings. If you are really hungry, make sure
you indulge in a healthy snack option:
-fresh fruit -edamame -veggies and
hummus -Shakeology.
If that isn't satisfying, your mind is playing
tricks on you.

Mmm... I love pancakes! This recipe is great if you are in the mood for a sweet treat. Sweet Potato Pancakes Ingredients: 1/2 cup cooked sweet potatoes 1/3 cup egg beaters (or 2 eggs) 1/4 cup oat flour 1/8 tsp baking powder 1 tsp honey cinnamon (as much as you like)
Directions:
I like to microwave my sweet potatoes in order to cook them quickly. I wash & dry them, poke holes in them, microwave for about 5 minutes and then flip and microwave for 5 minutes on the other side. While they are microwaving, blend 1/4 cup of oatmeal into oat flour. Mix 1/4 cup oat flour with 1/3 cup egg beaters, 1/8 tsp baking powder, and 1 tsp honey. Add in cinnamon. Mash in cooked sweet potatoes.
The batter will be thick. Scoop some onto a heated skillet. This recipe usually makes 4 pancakes. Cook until done to your liking on each side. Top with additional cinnamon and honey.

--Black Bean Brownies--
Ingredients:
1 can black beans
1/4 cup agave nectar
2 ripe bananas (I had mine in the freezer and just defrosted them.)
1 tbsp cinnamon
1 tsp vanilla extract
1/4 cup cocoa powder
1/4 cup oatmeal
sprinkles (optional)
Directions:
Add all ingredients to the blender except for the oatmeal and sprinkles.
Blend until well mixed.
Stir in oatmeal.
Pour into a greased baking dish.
Add sprinkles on top.
Bake at 350 for 30 minutes.
Enjoy!!

1/2 cup oatmeal

1/2 cup egg whites
3/4 tsp baking powder
1/4 tsp vanilla extract
1/4 cup blueberries
Topping:
1/4 cup greek yogurt
lemon juice
honey
cranberries
Cake Directions:
Blend all cake ingredients together. Grease a bowl or mug with coconut oil. Pour all blended ingredients into the greased bowl or mug. Microwave on high for 2 minutes. Plop the cake onto a plate. Topping Directions:
Mix greek yogurt and lemon juice together. Spread on top of cake. Drizzle with honey. Garnish with cranberries.

Taking a road trip? Flying across the country? Taking a 2-hour flight? However you are traveling - don't get caught without snacks! I know I hate it when my stomach is growling. I get all grouchy and tempted by sweets and fried foods. Sooo.... To avoid temptations, I always pack snacks in my carry-on or purse so that I can stick to my healthy lifestyle.
Here are a few of my favorites:
Rice Cakes
Peanut Butter
P90X Protein Bars (My favorite is the Peanut Butter flavor.... YUM!!!)
100 calorie packs of almonds (I love how they are already portioned out and simple to throw in my bag!)
Magic Bullet is easy to take in a suitcase. I take fruit from the continental breakfast and whip up Shakeology or protein shakes in my hotel room.
Small container and plastic silverware for making salads while traveling. Stop by a local grocery store for a bag of lettuce and topping, throw them in the container, and eat on the go!

I know, it sounds little crazy to make cookies with chick peas... OK, it sounds ALOT crazy!

A healthier alternative for when you want a special chocolate treat.
Chick Pea Cookies
Recipe:
1 can of chick peas
1/2 cup natural peanut butter
1/4 cup agave
3/4 cup chocolate chips
2 tsp vanilla extract
1 tsp baking powder
Put all ingredients in a blender or food processor. Blend until well mixed. Batter will be sticky. Spoon onto a non-stick baking pan. Push down to make cookie-shaped circles because they will not rise much. I saved a few chocolate chips to put on top.
Bake at 350 for 12-15 mins.
They are soooo good dunked in vanilla almond coconut milk! Mmmmmm!!! They are probably still over 100 calories per cookie, so don't overindulge. It's just a treat, not a treatment. But heathy-ish! Hope you enjoy!!
I was organizing and cleaning up my office space when I had a BRILLIANT idea!
We have a ton of wine corks...
...so I decided to use one make a little organizer for my paper clips and push pins. I ran to the kitchen, grabbed two lids off of jar candles, and a wine cork.
It literally look me about 10 seconds to make it once the glue gun was hot.
Put a little bit of hot glue onto one end of the wine cork.
Push the cork onto one of the jar candle lids.
Add more hot glue to the top of the cork.
Push the other lid on top. DONE!
Use for organization on your desk or wherever you want!! Simple, cute, and inexpensive!
Banana-Oatmeal Peanut Butter Cookies Prep time: 10 minutes Cook time: 15 minutes Makes about 15 cookies (mine made more than this) 3 ripe bananas, mashed 1 tablespoon vanilla extract 3/4 cup chunky peanut butter 3 tablespoons pure maple syrup 2 cups old fashioned rolled oats 1/2 cup whole wheat flour 1 teaspoon baking powder 1/2 cup non-dairy chocolate chips or raisins (I used both the first time I made these. YUM!) Preheat the oven to 350. Line a baking sheet with parchment paper. In a large bowl, mix the bananas, vanilla, peanut butter, and maple syrup until they are a creamy consistency. (I bought an entire bag of ripened bananas at Sweetbay for $1.22!! Isn't that a great deal?! I mashed 3 of the bananas for this recipe. I peeled the rest, put them in baggies and tossed them in the freezer. Frozen bananas are soooo good in shakes!)
In a seperate bowl, combine the oats, flour, and baking powder.
Add the dry ingredients to the wet ingredients and stir until they are well combined; the batter should be slightly sticky. Fold in the chocolate chips or raisins. (or both!)
Place rounded, heaping tablespoon-size balls of the batter onto the lined baking sheet. Bake for 15-18 minutes.
Gobble these up while they are still warm. ^^^ Rip said it was OK to gobble them up!! ^^^ I sure did!
I dunked a few of them in Vanilla Coconut Milk!!! OMG I highly recommend buying that stuff.

The recipes are awesome! You should definitely buy the book! Rip gives
a TON of great information about why it is beneficial to follow a
plant-strong diet. We went to see him present at Whole Foods a few
months back and he is so inspirational!! Brought tears to my eyes to
listen to him speak. I am so thankful that we were able to meet him.

In the mood for a pancake breakfast? I have been making protein pancakes almost every weekend. YUM!! This recipe will tickle your taste buds! A whole lot of chocolatey-coconut goodness in every bite!
Ingredients: 1/2c raw rolled oats 1/4c cottage cheese 2 egg whites 1/2 scoop chocolate protein powder 1/2t coconut extract 1T unsweetened almond coconut milk 1t cocoa powder 1T unsweetened coconut flakes Directions: In a blender, combine 1/2c raw rolled oats, 1/4c cottage cheese, 2 egg whites, 1/2 scoop chocolate protein powder, 1/2t coconut extract, 1T unsweetened almond coconut milk, 1t cocoa powder, and 1T unsweetened coconut flakes. Batter should be thick. Pour onto a HOT griddle, but no higher than medium heat. Wait a couple seconds, then slowly pour more batter onto each pancake to make them thicker. I topped them with coconut flakes and carob chips. For the syrup, mix a small amount of Chocolate Shakeology with a little bit of water and pour over top. YUM!
I love finding healthy alternatives to my favorite unhealthy meals. I used to buy those mini Ben & Jerry's or a half gallon of ice-cream and sit down with a spoon. No wonder I was overweight. I recently discovered this amazing recipe for a healthy banana split!
Ingredients: 1/2 frozen banana (peel bananas, cut them in half, freeze) 1/2 cup frozen strawberries 1 cup almond milk 1 scoop Chocolate Shakeology Directions: Put all ingredients in a blender and blend well. I used my Vitamix. Started it at Variable 1 and turned it up to 10 and then HIGH. Push the ingredients into the blades using the tamper. Blend for about 30-60 seconds. Mixture will be thick like ice-cream.
Scrape it out of the blender and into a bowl or cup. Eat with a spoon. Mmmmm! No more cravings for ice-cream! I enjoyed this dessert for breakfast. Healthy and delicious. Better than a banana split.
