Cinnamon and Smoked Paprika Sweet Potato Fries

Ingredients:
2 large sweet potatoes
1 tbsp. cinnamon
1 tbsp. smoked paprika
olive oil

Directions:
Preheat oven to 375 degrees.
Wash the sweet potatoes and cut into thick, even slices – about an inch thick. Place the slices in a bowl and cover them in a generous amount of olive oil, 1 tbsp. of paprika and 1 tbsp. of cinnamon. Use your hands to mix it all together, covering the potato slices. Transfer slices to a baking sheet.
Allow them to bake for about an hour, although they will need to be turned over once or twice during cooking to make sure that they’re evenly cooked. Once they are perfectly soft and tender they’re ready to be enjoyed!

Sweet Potato and Roasted Red Pepper Bisque

Sweet Potato and Roasted Red Pepper Bisque

Ingredients:
1 sweet potato
1/4 red bell pepper
1 cup vegetable broth or water
1 1/2 tsp. olive oil
1 tsp. grated peeled ginger root
Bragg Liquid Aminos (to taste)

Directions:
Peel and cube sweet potato. Cook in boiling water until tender. Drain and set aside. Meanwhile, roast a whole red pepper in the oven at 400 degrees for 15 to 20 minutes, turning every 10 minutes until the skin is charred.

Place sweet potato, pepper, broth or water, olive oil, ginger root, and Bragg Liquid Aminos in blender. (If you want chunky soup, set aside some of the sweet potatoes and peppers.) Blend thoroughly, adding more liquid to achieve desired consistency. Transfer to a pot and gently heat on low until hot. Add salt, or seasoning if desired.

Note: I like to have leftovers so we used two large sweet potatoes and an entire red pepper so we could take it to lunch throughout the week.

Carrot Fries

Carrot Fries
Ingredients:
  • baby carrots
  • garlic powder
  • onion powder
  • Himalayan salt
((or your favorite seasoning))



Directions:
  • Slice baby carrots in half lengthwise. 
  • Rinse them in a colander. Shake off excess water but do not dry completely.
  • Put carrots into a bowl.
  • Add garlic powder, onion powder, Himalayan salt, or your favorite seasoning.
  • Toss to cover carrots with seasoning.
  • Bake at 400 degrees for 30 minutes.
  • Enjoy!

Chocolate Shakeology Pancakes

Ingredients:
1 scoop Chocolate Shakeology
1 banana
1/4 cup oatmeal
2 tsp almond milk
1 tsp vanilla extract
1 tsp baking powder
1/3 cup egg whites

Directions:
Combine and blend.
Pour batter onto a pan and cook pancakes until done to your liking.

Mix 2 tbsp PB2 with a little bit of water and use as syrup.

Oatmeal Cookies with Chocolate Morsels and Toasted Pecans
21 day FIX approved recipe


Ingredients:
1 cup old-fashioned oats
1 tsp. ground cinnamon
1/2 tsp. sea salt
1 cup unsweetened applesauce
1/4 cup semi-sweet chocolate morsels
1/4 cup chopped raw pecans, toasted



Directions:
1) Preheat oven to 350
2) Lightly coat baking sheet with spray. Set aside.
3) Combine oats, cinnamon, and salt in a medium bowl; mix well.
4) Add applesauce, morsels, and pecans; mix well.
5) Drop heaping tbsp. onto prepared baking sheet, flatten with a spatula.
6) Bake for 14 to 16 minutes or until firm.

Notes:
How do you chop and toast the pecans?
Add 1/4 cup of pecans to a baggie and crush them with a spoon.
Pour crushed pecans into a pan and toasted them for a few minutes.

Three Bean Salad

Three Bean Salad

Ingredients:
1 cup shelled edamame
1 can chick peas
1 can kidney beans
1/2 cup corn
2 tbsp red wine vinegar
1 tbsp olive oil
1 teaspoon dijon mustard
2 tbsp parsley
2 tbsp cilantro
salt and pepper



Directions:
In a small bowl, whisk together red wine vinegar, mustard. Slowly whisk in olive oil. Set aside.

Open cans of beans and rinse with water.

Mix edamame, chick peas, kidney beans, corn. Gently toss in the dressing.
Add salt and pepper to taste.

Store in the fridge. Stir before serving.

Strawberry Chia Yogurt

Don't sacrifice flavor! Eating healthy can taste great, too. Here is a simple recipe for a yummy treat that will keep you full. In a hurry? It only takes 3 ingredients and a few minutes of your time. Throw it into a container and take it with you on-the-go!

You need:

3/4 cup Greek yogurt
2 1/2 tsp chia seeds
15 strawberry slices

Stir all ingredients together and enjoy!


Tip: Try mixing it up by adding honey, cinnamon, or using different kinds of fruit.

Citrus Vinaigrette Dressing - T25 Nutrition Guide

Citrus Vinaigrette Dressing

Ingredients:
3 tbsp fresh 100% orange juice
2 tbsp fresh lemon juice
1/2 tsp raw honey
2 tsp Dijon mustard
3 tbsp extra virgin olive oil

Directions:
  • Combine orange juice, lemon juice, and honey in a medium bowl; whisk to blend.
  • Stir mustard; mix well.
  • Slowly add oil while whisking; mix well.

Tip: Store leftovers in a container in the fridge. If dressing thickens when cold, hold at room temperature for thirty minutes, and stir before serving.
