Banana-Oatmeal Peanut Butter Cookies
Prep time: 10 minutes
Cook time: 15 minutes
Makes about 15 cookies (mine made more than this)
3 ripe bananas, mashed
1 tablespoon vanilla extract
3/4 cup chunky peanut butter
3 tablespoons pure maple syrup
2 cups old fashioned rolled oats
1/2 cup whole wheat flour
1 teaspoon baking powder
1/2 cup non-dairy chocolate chips or raisins (I used both the first time I made these. YUM!)
Preheat the oven to 350. Line a baking sheet with parchment paper.
In a large bowl, mix the bananas, vanilla, peanut butter, and maple syrup until they are a creamy consistency.
(I bought an entire bag of ripened bananas at Sweetbay for $1.22!! Isn't that a great deal?! I mashed 3 of the bananas for this recipe. I peeled the rest, put them in baggies and tossed them in the freezer. Frozen bananas are soooo good in shakes!)
In a seperate bowl, combine the oats, flour, and baking powder.
Add the dry ingredients to the wet ingredients and stir until they are well combined; the batter should be slightly sticky. Fold in the chocolate chips or raisins. (or both!)
Place rounded, heaping tablespoon-size balls of the batter onto the lined baking sheet. Bake for 15-18 minutes.
Gobble these up while they are still warm.

I dunked a few of them in Vanilla Coconut Milk!!! OMG I highly recommend buying that stuff.

a TON of great information about why it is beneficial to follow a
plant-strong diet. We went to see him present at Whole Foods a few
months back and he is so inspirational!! Brought tears to my eyes to
listen to him speak. I am so thankful that we were able to meet him.

just got the book a few days ago and I have already made these cookies 2
times. They are soooo good. They only last a short while.
