Red, White, and Blue-berry!

Red, White, and Blue-berry Mug Cake

Cake Ingredients: 
(makes one serving)
1/2 cup oatmeal
3 tbsp coconut flakes
1/2 cup egg whites
3/4 tsp baking powder
1/4 tsp vanilla extract
1/4 cup blueberries

Topping:
1/4 cup greek yogurt
lemon juice
honey
cranberries

Cake Directions:
Blend all cake ingredients together. Grease a bowl or mug with coconut oil. Pour all blended ingredients into the greased bowl or mug.  Microwave on high for 2 minutes. Plop the cake onto a plate.

Topping Directions:
Mix greek yogurt and lemon juice together. Spread on top of cake. Drizzle with honey. Garnish with cranberries.
