BBQ Chicken Portobello Mushroom Pizza
Ingredients:
- olive oil
- salt, pepper
- portobello mushrooms
- 1/2 cup spinach
- 1/4 cup tomato sauce
- 1/2 cup cooked quinoa
- 4 oz. cooked chicken
- BBQ sauce
Directions:
- Brush mushrooms with olive oil. Season with salt and pepper.
- On preheated grill pan, grill mushroom until soft to the touch, approx 6 mins per side.
- While mushrooms are grilling, fully cook the chicken.
- Top grilled mushrooms with 1/4 cup tomato sauce, spinach, 4 oz. cooked chicken, and blue cheese. Bake until cheese is melted.
- Place on a bed of cooked quinoa (1/2 cup) and top with BBQ sauce.
