BBQ Chicken Portobello Pizza

BBQ Chicken Portobello Mushroom Pizza

Ingredients:
  • olive oil
  • salt, pepper
  • portobello mushrooms
  • 1/2 cup spinach
  • 1/4 cup tomato sauce
  • 1/2 cup cooked quinoa
  • 4 oz. cooked chicken
  • BBQ sauce

Directions:

  1. Brush mushrooms with olive oil. Season with salt and pepper.
  2. On preheated grill pan, grill mushroom until soft to the touch, approx 6 mins per side.
  3. While mushrooms are grilling, fully cook the chicken.
  4. Top grilled mushrooms with 1/4 cup tomato sauce, spinach, 4 oz. cooked chicken, and blue cheese. Bake until cheese is melted.
  5. Place on a bed of cooked quinoa (1/2 cup) and top with BBQ sauce.
