Egg Roll in a Bowl
Ingredients
- 1 pound ground turkey
- 1 package of shredded cabbage/coleslaw mix
- ½ medium onion, thinly sliced
- ½ cup bean sprouts
- 1 tablespoon sesame oil
- ¼ cup soy sauce or Bragg’s liquid aminos
- 1 clove garlic, minced
- 1 teaspoon ground ginger
- 2 tablespoons chicken broth
- Salt and pepper to taste
Instructions
- Brown ground turkey in a large pot.
- Add sesame oil and onion to pan with browned turkey. Mix together and continue cooking over medium heat.
- Mix soy sauce or Bragg's liquid aminos, garlic, and ground ginger together in a small bowl. Once onions have browned, add the sauce mixture to the pan.
- Immediately add the cabbage and bean sprouts to the pan. Toss to coat the veggies. Add chicken broth to the pan and stir. Continue cooking over medium heat for three minutes, stirring frequently.
- Garnish with salt and pepper.

Notes: We buy ground turkey at Sam's Club and I still had a 2.5lb. package of turkey left over so I used all of it. I doubled everything else in the recipe and it made 6 containers of the meal for us to take for lunches this week.
You could also top the recipe with green onions for some added flavor!
